When I was 100% I was in school and could live off fries 5 days a week, plus assorted greens to add vitamins around the edges. (Not as unhealthy as it sounds, except maybe for the acrylamide.) And lots of fake-chikkin patties.
I see a lot of people frowning on the eating-crap-out-of-a-box approach on principle, and I am down with variety lately myself [moreso than I was back then, when I was willing to "sacrifice" it to be less of a lardass], but am short on time to go preparing elaborate multi-pot meals and things (particularly all the cleanup that demands afterwards).
So, uhh... anyone got some staples to suggest? Given the nature of the lunch counter near work, I could go back to doing the fries thing (and often do anyway, but following that with dead animal in the same 24 hours tends to negate the 'it's not so bad as long as I don't eat any other saturated fat today' aspect), but that and salad are their only meatless options. I am totally down with extruded vegetable protein in chicken-nugget shapes (it's like eating THE FUTURE!), but that shit actually gets expensive compared to a tray of dismembered birds.
Suggest me some staples here, people. Beans and pasta are obvious, but I can't really tolerate either more than once a week, so that's only 2 meals out of 14-21. Tofu's okay but I'm bad at working it into something 'substantial.' Noodles and rice are also obvious (I dig noodles!), but they also get boring and cleaning out the pots gets old quick.
I recommend also couscous, which is super easy to make and you can throw in some veggies and fried tofu with it, or just veggies.
Falafel is a good sandwich food that's vegetarian too (made from fried chick pea flour) with tahini. (Tahini is a paste made from sesame seeds) Sometimes I just roast a bunch of vegetables with tahini in the oven and it comes out pretty good.
Also, if you're like me, you've written off salads for being boring. But you can make awesome salads with avocado, arugala, spinach, carrots, olives, stuff like that. I'd say try taking a veggie cookbook out of the library, that might give you some ideas.
Plus there's always pizza (if you still eat cheese), subway, and (blarf) taco bell.
