This is not Eduardo, but another character and a representation of what would happen to Ed if he didn't get the help needed for his curse.

Long time ago, a man formerly known as Wilfried Shepherds found the same ring in the middle of the woods. Curious, he put the ring on and uttered the phrase on the ring that would afflict him with the curse of dog. Mina was around but was still grasping her vampiric affliction and inexperienced in the world of monsters. The two met and bonded over their shared struggles. Mina did her best to find a solution for her new friend Shep, reading book after book looking for information about the ring, all while holding off her bloodlust. She eventually found something that might work: the ring's curse is lifted during an act of self-sacrifice or "heroism against all odds". But this act must be done soon, as time goes by, the curse would become significantly worse, causing Shep to stay in canine form indefinitely. And without proper training to control the curse... Shep would end up not just a dog, but a canine monster.

After many moons later trying to help Shep, Mina had to do the unthinkable, give in to her bloodlust and staged an attack at a nearby village. All for the sake that Shep would stop her, against all odds, in hopes it would break the curse. Shep did what he could to save the village from his friend, and eventually transformed into a dog at will, attacking Mina's minions and protecting the humans that were afraid of him. However, by doing this, he exacerbated his curse, causing Shep to go borderline feral. By the time the two finally clashed, Shep's act of heroism were in vain and became a monster fighting another. Mina had failed to save him, but she didn't want to hurt him. With her bloodlust sated, she tried to stop her friend from rampaging by forcing a spell and a pact on Shep. The fighting soon stopped as Mina took Shep and herself back to the woods, far away from the village. Shep soon regained his sense of self, but realized he can no longer become human anymore, just a dire beast of a dog. But his friendship with Mina remains and kept his pact with her, becoming a guardian for the vampire for as long as he can.

Its no wonder Mina is willing to help Eduardo with his curse now. She sees Shep in the new sheepdog. Now with century-long knowledge, she hopes that her mistake won't repeat itself.
She won't let Ed's curse go unchecked.
