undertakers chicken rice and vegetable soup
*This recipe is for those of you who like to cook once a week and have lots of left overs. Once the sutra fry is done you may want to freeze what you don't eat and save it for later.*
Ingredients:
2 Large onions
3 bell peppers, red, orange, yellow
8 scotch bonnet peppers (very hot peppers if you use these them remember to wash you paws before you touch you face.)
7 stocks of celery
11 cloves of garlic (if you don't like that much garlic then you can add as much as you like. But for me I love garlic)
3-4 box of chicken stock (or if you made some home made stock that will work as well. )
2 heads of broccoli
2 cups of mushrooms
1 cup of kale
1 cup of spinach
12 boneless/ skinless chicken thighs
13 cups of rice
6 chicken bouillon packs
about a table spoon of thyme, club house greek, lemon & herbs pre mix spice
Method :
For this one I use my big stock pot so you may want to cut the ingredients down if you have a smaller pot. Set pot on stove and turn on med-high and add enough oil to cove the bottom of the pot. Cut up onion, bell pepper celery and scotch bonnet peppers in to small peaces and add to the pot and let them cook until they are soft. Now finely chop up the garlic and let cook for a few mins. Add chicken stock to the pot just in till the vegetables are just covered. Chop up the broccoli, mushrooms and kale and add to the pot. Next cut up chicken thigh's in to bits size peace and add to the pot. Add the spice and let cook until the chicken is done. Once the chicken is done you can eat just as is or if you like you can now add the rice and once the rice is cooked its ready to eat.
