When life gives you ripe bananas make some muffins. A local assistance group that I donate eggs to when we have too many had extra ripe bananas and I got handed enough to feed several families. One friend is making banana cake or bread, I made muffins and am considering cooking some into a banana chutney or jam and the neighbour is making a wheat free, gluten free banana cookie.
Basic Muffin Recipe plus extras
Ingredients
• 2 cup self-raising flour
• 1/2 cup sugar
• 1 egg beaten
• 1/4 cup oil
• 1 cup milk
Extras
2 small bananas mashed with a little lemon juice
1 tsp vanilla essence
1/2 cup chocolate sprinkles
*optional add a tablespoon of banana topping to give it that extra banana flavour boost
Equipment
• 1 12-hole muffin pan
Method
• STEP 1. Preheat oven to 180 degrees Celsius and grease (I use oil spray) muffin pan
• STEP 2. Place all the basic ingredients in a bowl.
• STEP 3. Mix until just combined then add banana mash, vanilla and sprinkle, mix until just combined.
• STEP 4. Fill muffin pan 3/4 full of mix for each muffin
• STEP 5. Bake at 180 degrees Celsius for approximately 20 minutes.
* From Chris: 180 C = 350 F *
Notes
I spilt the milk and that made the mix a little wet so I added a bit more flour and ended up with 14 rather than 12 muffins.
