
For Mother's Day I made my momma something nostalgic. She loves banana pudding with nilla wafers so I attempted to create it in cake form. This was the result.
What You'll Need:
-1 box of yellow cake mix and all it's needed ingredients (I used Betty Crocker)
-1 can of cream cheese frosting
-3 ripe bananas
-imitation banana extract
-1 box of mini Nilla wafers
-cinnamon
- 2 tbs butter
-1/2 a cup of brown sugar
-potato masher
-1 large bowl
-1 skillet
-2, 9 inch circle cake pans
Step 1:
Start by slicing 2/3 bananas into coins. place in a skillet with the butter, brown sugar, and a few dashes of cinnamon. Cook together for 3 minutes just to soften them up. Next take the potato masher and smash them up into an almost paste. Remove from heat and let cool down for at least 5 minutes.
Step 2:
Next, make the cake batter in the large bowl mixing all of it's need ingredients (usually water, oil, and 3 eggs). Once well mixed, add the banana paste as well as 4 or 5 drops of the imitation banana extract. Mix well.
Step 3:
In well greased cake pans, equally distribute the batter to both cake pans. Bake at 350 degrees for 28 to 30 minutes. Let cool for at least 15 minutes after baking.
Step 4:
Carefully remove one of the cake layers and place on a cake dish (or a plate if you don't have a cake dish.) Frost the top only with frosting until completely covered, then equally place a full layer of nilla wafers on top.
Step 5:
Carefully remove the second cake layer and place it on top of the first, equally frosting the rest of the cake on top and the sides.
Step 6:
Cut the last banana into coins and place in a festive pattern on top of the cake with more nilla wafers.
