
Finally was able to do one of these. A hotpot for Chinese New Years.
This isn't an official version, just one I can do with what ingredients I can get with easy. Not vegan as I wasn't able to find a low sodium vegetable broth so I used chicken instead.
Baby bok choy 3 for this pot cut in 6 pieces length ways
One can whole water chestnuts rinsed
One can baby corn rinsed
one can bamboo shoots rinsed
one onion cut in thin wedges
2 cloves garlic finely minced
One block firm tofu cut into large sugar cubes size pieces
2 slices ginger finely minced or left whole I Like the taste and with it minced it blends in
One one quart or liter carton low sodium chicken or vegetable broth
It's pretty simple. layer the ingredients in a casserole dish or any heavy pot with a lid that can go on a burner. Pour over broth until almost covered, cover and let go on low heat overnight. Serve over cooked rice. Basically take a bowl with your rice in it and ladle over what you want.
It's pretty simple but very tasty. You can add cut up raw chicken if you want and any seasonings you want to use. I keep it simple and add whatever after. So enjoy and Happy Chinese New Years!
