Well a'course y'all already know what a big drooler I am over steak, an m'buddy an roomie Ramseys (Goddess bless'im!) always makes sure we're havin' steaks fer dinner regularly (Hell we're texans... it's be unheard of goin' fer longer'n a week without a steak dinner here! heh) an sometimes he bakes up some potatoes as the side dish (yer classic steak w/ baked potato)
Well... I thought I'd get a lil' creative with mine so in honor'a Texas havin' the best steaks in this good ol' U S of A, thought I'd make this succulent specimen ta pay homage... so here we have my 'official' version of a Texas Rattlesteak!
1.) Take yer plate an smear nearly the entire bottom with sour cream. Add some Nature's seasonings an cheese (if prefered) or whatever else ya'd normally top yer baked potato)
2.) now on a seperate plate (I used a paper plate fer this) take yer baked potato and slice it down the center then give it several slices down the length. Add butter and let that melt in fer a bit.
3.) flip the potato over onto the bed of sour cream, cheese an whatever else ya included. Use a fork if desired ta further 'break up' the 'landscape' that'll serve as the ground fer yer 'rattlesteak'.
4.)Cook yer steak ta preference but before it's halfway ta how ya like it, take it off the grill/skillet an set it on yer paper plate then make alternatin' cuts across the steak then place back in the skillet/grill for further cookin' until it's how ya want it then serve on top of the baked potato.
5.) an this part's also optional but I did it as a visual garnish fer this particular meal, add in some diced green onions an french-cut greenbeans in various spots ta serve as the 'grass' the rattlesteak is windin' through an viola!
A meal that truely embodies the great state'a Texas! Hope ya like it :)

"I ate a goddamn rattlesnake once. We was drunk as F*** too, rolled up on it on our 4 wheeler. I was like, run over that sonnovabitch and see what happens. It was all wigglin' and sh**. Mother f***er tried to bite me, I was like, f*** no snake! Then I beat it in the head with my machete. I'm about to eat you with some mayonnaise you dumbass snake" -Jungle, Action Figure Therapy
