Bypass mob griefing is kind of misnamed. Invert mob griefing is probably a better way to describe it, as it's being XOR'd. (If mobGriefing is false, the mob with bypass will be able to grief. If mobGriefing is already true, this config option will BLOCK the mob from griefing.)
It's probably not worth changing all the config options or anything, but maybe it could be clarified in the documentation or something?
I had set villager bypass mob griefing to true at some point while looking through configs, thinking "yeah I want villagers to be able to farm," then I have mob griefing enabled in game anyways, so my villagers weren't able to farm, because I was negating it with that option... Regardless, even if nothing is done, hopefully this can serve as some documentation if anyone else comes searching!
