My recording would sound a bit nicer if everything were an octave lower, something like that second video. Unfortunately, I can't afford the six- and eight-foot instruments that would be necessary to play it that way.

Why thank you! The recorder is an underrated instrument, at least in the U.S.
There is another technique I haven't tried yet to make these recordings sound better, which I plan to use on subsequent ones. I will at least record one more choral piece by this composer, and I might try arranging some organ music as well.
